FRESH PINEAPPLE TOPPING

Serve warm over vanilla ice cream. A sprig of fresh mint will really add some pizzazz.(Serves 4)
1 Fresh, ripe pineapple |
1/2 Cup orange juice |
1/4 Tsp vanilla extract |
1 Tsp lemon juice |
1/4 Cup brown sugar |
Sprig of fresh mint |
Vanilla ice cream |

Cut the top and bottom off of the pineapple. Peel by slicing off rind in vertical strips. Be sure to get all of the “eyes”. Slice into 1” rings and remove center core. Cube rings into 1” chunks.
- In a medium-sized saucepan, bring the orange juice, lemon juice and brown sugar to a boil until the sugar is dissolved. Add the vanilla extract.
- Place the pineapple slices in an oven-proof casserole dish, pour the orange mixture over the pineapple slices and sprinkle a little more brown sugar over the fruit. Bake the pineapple at 450 degrees for 15 minutes.
